The person you appoint is called your attorney. The Notary Public in London can witness your Power of attorney, appointing someone like lawyers overseas, family members or a friend to sign documents and act on your behalf. Similar to a letter of authority.

A special / limited power of attorney
Your attorney can only do limited things for you.
